Lactobionic Acid -
Current Status & Outlook by 2015
Lactobionic acid, also known as galacto?gluconic acid, is an organic acid traditionally
produced by chemical oxidation of lactose. Several groups have also developed a
fermentation route to lactobionic acid from lactose. The structure and functionality of
lactobionic acid resembles gluconic and lactic acids.
In this survey we have reviewed the current status of lactobionic acid with emphasis on:
