Bakers' Yeast & Dried Yeast - Current Status & Outlook by 2015

This survey reviews the output, production, producers, market share, output and price trends.
The output and producers of bakers' yeast are given for every West European country, N. America and all countries in Central & South Asia and Australia. For every producer we have estimated the total output of yeast and the proportion used as bakers' yeast or converted to dried yeast and yeast extracts. The production process of dried yeast is reviewed and producers and their output are listed.

Current prices of bakers' yeast and dried yeast are given for Europe and the U.S. with reference to the cost of molasses feedstock. The price ratio of compressed to dried yeast is estimated. Major producers of yeast are profiled, listing output, location of plants and future outlook. Outlook for the yeast business by 2015 is discussed.
