Fumaric Acid - Current Status and Outlook by 2015
This dicarboxylic acid is the trans-isomer of maleic acid.
It has well-established industrial uses and applications in foods, animal feeds and
intermediate for amino acids. Fumaric acid [often as co-product with malic acid] is
derived from maleic anhydride, which is produced by the catalytic oxidation of benzene
or butene feedstocks. Fumaric acid is used in foods, animal feeds and industrial
