Enzyme-Modified Cheese - Current Status & Outlook by 2015

Enzyme-modified cheese {EMC] is cheese that has been treated enzymatically to enhance its flavour. This survey comprises four sections of which section 1 is the introduction reviewing the background to emc and the composition of various types of emc. In section 2 enzymes used for the production of emc are reviewed , enzyme companies active in this area listed and the current prices and the market as well as the market shares for specific enzymes are estimated.
