Natural Food & Feed Colours
The trend towards 'natural' foods, has led in recent years to the substitution
of synthetic by natural or nature-identical colours in many food products and feeds.
In this survey we have discussed regulatory aspects for colours in the EU.
In a subsequent section we review the technology, applications, output producers,
prices, markets and outlook by 2015 for the following food and feed colours:
- annatto
- anthocyanins
- astaxanthin
- beet juice [betanin]
- -ß-apo-carotenal
- -ß-carotene
- canthaxanthin
- capsanthin [paprika extract]
- caramel
- cochineal/carmine
- lutein [tagetes extract]
- lycopene
The most important natural food colours are b-carotene
[yellow], anthocyanins [red], cochineal [red] and annatto [yellow].
