Oligosaccharides [Inulin], Probiotics, Carotenoids as Nutraceuticals
A nutraceutical is any substance considered a food that provides health benefits as
well as disease prevention. Nutraceutical may comprise traditional foods,
isolated nutrients, dietary supplements and herbal products.
In this survey we have reviewed three major nutraceutical ingredients that are added to
foods and beverages: oligosaccharides [ inulin], probiotics and carotenoids.
We discuss the current status of these nutraceuticals and in which foods they are established.
The market for each of these ingredients is determined for Europe, U.S. and Japan and
the projected market by 2015 assessed.
