Xanthan – Current Status and Outlook by 2020

Xanthan, a fermentation-derived polysaccharide, has substantial usage as viscosifier in foods, oil drilling muds and various industrial applications. In this survey the markets for xanthan are reviewed with special emphasis on its applications as a thickener in food products [i.e. sauces], petfoods, animal feed and cosmetics. Industrial applications of xanthan are in oil drilling and many other areas.
